Ingredients:

  • 2 lbs (900g) ripe Roma tomatoes, diced
  • 1 medium white onion, finely diced
  • 1-2 jalapeño peppers, seeded and minced
  • 1 cup (25g) fresh cilantro, chopped
  • 2-3 cloves garlic, minced
  • Juice of 2 limes (about 4 tablespoons/60ml)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground cumin (optional)

Instructions:

  1. Dice tomatoes, onion, and jalapeño (after seeding!). Chop the cilantro. Mince the garlic.
  2. In a large mixing bowl, combine the diced tomatoes, onion, jalapeño, cilantro, and garlic.
  3. Pour in the lime juice and sprinkle with salt and cumin (if using).
  4. Gently toss all the ingredients together until well combined.
  5. Taste the salsa and add more salt, lime juice, or jalapeño to your preference.
  6. Cover the bowl and refrigerate for at least 15 minutes to allow the flavors to meld together.
  7. Serve with your favorite tortilla chips, on tacos, or however you like.
