Ingredients:
- 2 lbs (900g) ripe Roma tomatoes, diced
- 1 medium white onion, finely diced
- 1-2 jalapeño peppers, seeded and minced
- 1 cup (25g) fresh cilantro, chopped
- 2-3 cloves garlic, minced
- Juice of 2 limes (about 4 tablespoons/60ml)
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground cumin (optional)
Instructions:
- Dice tomatoes, onion, and jalapeño (after seeding!). Chop the cilantro. Mince the garlic.
- In a large mixing bowl, combine the diced tomatoes, onion, jalapeño, cilantro, and garlic.
- Pour in the lime juice and sprinkle with salt and cumin (if using).
- Gently toss all the ingredients together until well combined.
- Taste the salsa and add more salt, lime juice, or jalapeño to your preference.
- Cover the bowl and refrigerate for at least 15 minutes to allow the flavors to meld together.
- Serve with your favorite tortilla chips, on tacos, or however you like.
