Ingredients:
- 1 lb (450g) ground beef
- 1 medium yellow onion, finely chopped
- 1 green bell pepper, finely chopped
- 1 (15 ounce/425g) can of diced tomatoes, undrained
- 1 (1 ounce/28g) packet taco seasoning
- 1/2 cup (120ml) water
- 1 (10.75 ounce/305g) can condensed cream of mushroom soup
- 1 cup (240ml) ranch dressing
- 1 cup (113g) shredded cheddar cheese
- 1/2 cup (57g) shredded Monterey Jack cheese
- 1 (10.5 ounce/298g) bag Fritos corn chips
- Optional Toppings: shredded lettuce, diced tomatoes, sour cream, sliced green onions, pickled jalapeños
Instructions:
- Sauté onion and green pepper in a large skillet until softened. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
- Stir in the diced tomatoes, taco seasoning, and water. Bring to a simmer and cook for 5 minutes, stirring occasionally.
- In a mixing bowl, combine the cream of mushroom soup, ranch dressing, cheddar cheese, and Monterey Jack cheese. Stir until well combined.
- Spread a layer of Fritos corn chips in the bottom of the baking dish. Top with the seasoned ground beef mixture.
- Pour the ranch-cheese sauce evenly over the ground beef.
- Sprinkle the remaining Fritos corn chips over the cheese sauce.
- Bake in a preheated oven at 350°F (175°C) for 20 minutes, or until the cheese is melted and bubbly.
- Top with your favorite toppings, such as shredded lettuce, diced tomatoes, sour cream, and sliced green onions.
- Let cool slightly before serving.
