Ingredients:

  • 2 large Honeycrisp or Fuji apples
  • 1 cup cold water
  • 1 tbsp lemon juice
  • 1/4 cup creamy natural peanut butter
  • 2 tbsp plain Greek yogurt
  • 1 tsp honey
  • 1/4 cup low-sugar granola
  • 1 tbsp mini dark chocolate chips
  • 1 tsp chia seeds

Instructions:

  1. Core the apples and slice them into 1/2-inch thick rings, keeping the skin on for fiber.
  2. Immediately submerge the rings into a mixture of cold water and lemon juice for 3 minutes to prevent browning.
  3. Remove apple rings and pat them completely dry with paper towels to ensure the toppings adhere.
  4. In a small bowl, whisk together the peanut butter, Greek yogurt, and honey until it forms a pale, velvety mousse.
  5. Lay the dry apple rings flat and spread a generous layer of the peanut butter mixture onto each ring.
  6. Sprinkle the granola, mini chocolate chips, and chia seeds over the peanut butter base, pressing down slightly to secure the toppings.
