  • 2 tablespoons sun-dried tomatoes (US: oil-packed, drained and chopped, Metric: ~20g)
  • 1 tablespoon lime juice (US: fresh, Metric: ~15ml)
  • 1/2 teaspoon salt (US: kosher, Metric: ~3g)
  • 1/4 teaspoon black pepper (US: freshly ground, Metric: ~1g)
  • 8 wonton wrappers (US: square, Metric: ~8cm x 8cm)
  • 1 tablespoon water (US: for sealing, Metric: ~15ml)
  • 2 cups vegetable oil (US: for frying, Metric: ~475ml)
  • 1/4 cup honey (US: good quality, Metric: ~85g)
  • 2 tablespoons rice vinegar (US: unseasoned, Metric: ~30ml)
  • 1 tablespoon soy sauce (US: low sodium, Metric: ~15ml)
  • 2 tablespoons cilantro (US: chopped, Metric: ~6g)
  • 1/2 teaspoon red pepper flakes (US: or to taste, Metric: ~1g)

Instructions:

  1. Prepare the Filling: Gently combine the mashed avocado, red onion, cilantro, jalapeño, sun-dried tomatoes, lime juice, salt, and pepper in a large bowl. Be gentle to avoid turning the avocado into mush.
  2. Assemble the Egg Rolls: Lay a wonton wrapper on a clean surface. Place a spoonful of the avocado mixture in the center of the wrapper. Moisten the edges of the wrapper with water. Fold the wrapper diagonally to form a triangle, pressing firmly to seal.
  3. Heat the Oil: Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Maintain this temperature throughout frying.
  4. Fry the Egg Rolls: Carefully place the egg rolls in the hot oil, working in batches to avoid overcrowding. Fry for 2-3 minutes per side, until golden brown and crispy.
  5. Drain and Cool: Remove the fried egg rolls with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
