Ingredients:
- 1 cup (240 ml) heavy cream
- 1 cup (240 g) mixed berries (strawberries, blueberries, raspberries)
- 3 tablespoons (45 g) sugar
- 1 teaspoon (5 ml) vanilla extract
- 1 tablespoon (15 g) gelatin powder (or agar-agar for vegan option)
- 2 tablespoons (30 ml) water (for dissolving gelatin)
- 1 cup (240 ml) fresh mixed berries, plus extra for garnish
- 2 tablespoons (30 g) sugar
- 1 tablespoon (15 ml) lemon juice
Instructions:
- Sprinkle gelatin over water; let sit for 5 minutes until softened. Gently heat until dissolved, then set aside.
- Blend 1 cup of mixed berries with sugar and lemon juice until smooth. Strain puree through a fine mesh strainer for a smooth consistency (optional).
- In a mixing bowl, whip heavy cream and vanilla extract until soft peaks form.
- Stir dissolved gelatin into the berry puree and mix well.
- Gradually fold berry puree into whipped cream until fully incorporated, maintaining fluffiness.
- Spoon a layer of the mousse into serving glasses, followed by a layer of fresh berries. Repeat layers until cups are filled, finishing with mousse on top.
- Cover and refrigerate for at least 2 hours until set.
- Garnish with remaining mixed berries before serving.
