Ingredients:

  • 1 cup (240 ml) heavy cream
  • 1 cup (240 g) mixed berries (strawberries, blueberries, raspberries)
  • 3 tablespoons (45 g) sugar
  • 1 teaspoon (5 ml) vanilla extract
  • 1 tablespoon (15 g) gelatin powder (or agar-agar for vegan option)
  • 2 tablespoons (30 ml) water (for dissolving gelatin)
  • 1 cup (240 ml) fresh mixed berries, plus extra for garnish
  • 2 tablespoons (30 g) sugar
  • 1 tablespoon (15 ml) lemon juice

Instructions:

  1. Sprinkle gelatin over water; let sit for 5 minutes until softened. Gently heat until dissolved, then set aside.
  2. Blend 1 cup of mixed berries with sugar and lemon juice until smooth. Strain puree through a fine mesh strainer for a smooth consistency (optional).
  3. In a mixing bowl, whip heavy cream and vanilla extract until soft peaks form.
  4. Stir dissolved gelatin into the berry puree and mix well.
  5. Gradually fold berry puree into whipped cream until fully incorporated, maintaining fluffiness.
  6. Spoon a layer of the mousse into serving glasses, followed by a layer of fresh berries. Repeat layers until cups are filled, finishing with mousse on top.
  7. Cover and refrigerate for at least 2 hours until set.
  8. Garnish with remaining mixed berries before serving.
