Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 2 tbsp (18g) poppy seeds
- 1 cup (200g) granulated sugar
- ½ cup (115g) neutral oil
- 2 large (110g) eggs
- 1 tbsp (15ml) lemon zest
- 3 tbsp (45ml) fresh lemon juice
- 1 tsp (5ml) vanilla extract
- 1 ½ cups (225g) grated zucchini, squeezed dry
Instructions:
- Preheat oven to 350°F (175°C). Grease your loaf pan and line the bottom with parchment paper.
- Grate the zucchini using the medium holes of your box grater.
- Place the grated zucchini in a clean kitchen towel or paper towels and gently squeeze out the excess water to avoid a gummy loaf.
- In a medium bowl, whisk together the flour, baking soda, salt, and poppy seeds until well combined.
- In a larger bowl, beat the sugar and oil together.
- Add the eggs one at a time, whisking vigorously until the mixture is pale and smooth.
- Stir in the lemon zest, lemon juice, and vanilla extract.
- Gently fold the dry ingredients into the wet batter using a spatula, stopping just before the flour streaks disappear.
- Fold in the squeezed zucchini until evenly distributed.
- Pour the batter into the prepared loaf pan and bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
