- 1/2 cup (100g) brown sugar, packed
- 4 tbsp (55g) unsalted butter, chilled and cubed
- 1 tsp (2g) lemon zest
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tbsp (6g) lemon zest
- 1 tsp (5g) baking powder
- 1/2 tsp (3g) baking soda
- 1/2 tsp (3g) salt
- 1/2 cup (120ml) vegetable oil
- 2 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 2 tbsp (30ml) fresh lemon juice
- 1 1/2 cups (150g) shredded zucchini, lightly squeezed
- 1/2 cup (60g) powdered sugar
- 1 tbsp (15ml) fresh lemon juice
Instructions:
- In a small bowl, combine the flour, brown sugar, and lemon zest for the topping.
- Cut in the chilled butter using a fork or pastry cutter until the mixture resembles coarse, sandy crumbs. Set aside in the refrigerator.
- Place the granulated sugar and lemon zest in a large bowl. Use fingertips to rub the zest into the sugar until fragrant and slightly damp.
- Stir the flour, baking powder, baking soda, and salt into the lemon-sugar mixture.
- In a separate jug or bowl, whisk together the vegetable oil, eggs, vanilla, and lemon juice until smooth.
- Pour the wet ingredients into the dry ingredients. Stir with a spatula until just combined, ensuring no dry flour streaks remain.
- Gently fold in the shredded zucchini until evenly distributed.
- Preheat oven to 350°F (175°C). Grease a 9x9 inch square baking pan and line with parchment paper.
- Spread the batter evenly into the pan and top with the prepared streusel crumbs.
- Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
- Whisk powdered sugar and lemon juice together to create a glaze; drizzle over the cooled cake.
