Ingredients:

  • 1.5 lbs (680g) flounder fillets, skin on or off, patted dry
  • 3 tablespoons (45ml) olive oil
  • 2 lemons, zested and juiced
  • 2 cloves garlic, minced
  • 2 tablespoons (30ml) fresh parsley, chopped
  • 1 tablespoon (15ml) fresh thyme, chopped
  • 1/2 teaspoon (2.5ml) salt, or to taste
  • 1/4 teaspoon (1.25ml) black pepper, or to taste
  • A pinch of red pepper flakes (optional)
  • 1 tablespoon (15g) butter, cut into small pieces

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, combine olive oil, lemon zest, lemon juice, minced garlic, parsley, thyme, salt, pepper, and red pepper flakes (if using).
  3. Place the flounder fillets in the baking dish. Pour the lemon-herb marinade evenly over the fish, ensuring each fillet is coated. Distribute the butter evenly over the top of the fish.
  4. Bake in the preheated oven for 15-20 minutes, or until the flounder is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
  5. Garnish with extra fresh parsley and lemon wedges, if desired, and serve immediately.
