Ingredients:
- 1.5 lbs (680g) flounder fillets, skin on or off, patted dry
- 3 tablespoons (45ml) olive oil
- 2 lemons, zested and juiced
- 2 cloves garlic, minced
- 2 tablespoons (30ml) fresh parsley, chopped
- 1 tablespoon (15ml) fresh thyme, chopped
- 1/2 teaspoon (2.5ml) salt, or to taste
- 1/4 teaspoon (1.25ml) black pepper, or to taste
- A pinch of red pepper flakes (optional)
- 1 tablespoon (15g) butter, cut into small pieces
Instructions:
- Preheat oven to 400°F (200°C).
- In a small bowl, combine olive oil, lemon zest, lemon juice, minced garlic, parsley, thyme, salt, pepper, and red pepper flakes (if using).
- Place the flounder fillets in the baking dish. Pour the lemon-herb marinade evenly over the fish, ensuring each fillet is coated. Distribute the butter evenly over the top of the fish.
- Bake in the preheated oven for 15-20 minutes, or until the flounder is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
- Garnish with extra fresh parsley and lemon wedges, if desired, and serve immediately.
