Ingredients:

  • 1 large whole wheat tortilla (approx. 10-12 inch diameter)
  • 2 tablespoons low-fat marinara sauce
  • 1/4 cup part-skim mozzarella cheese, shredded
  • 15 slices turkey pepperoni (or low-fat pepperoni)
  • 1/2 teaspoon Italian seasoning
  • Optional: Red pepper flakes, garlic powder (to taste)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Place tortilla on a baking sheet lined with parchment paper (if using).
  3. Spread marinara sauce evenly over the tortilla, leaving a small border.
  4. Sprinkle mozzarella cheese evenly over the sauce.
  5. Arrange turkey pepperoni slices on top of the cheese.
  6. Sprinkle with Italian seasoning, and optional red pepper flakes and garlic powder.
  7. Bake for 10-12 minutes, or until the cheese is melted and bubbly and the tortilla is crispy and golden brown. Keep a close eye; tortillas can burn quickly!
  8. Let cool for a minute or two before slicing and serving.
