Ingredients:

  • 4 large eggs (room temperature)
  • 1 cup (200 g) granulated sugar
  • 1 cup (125 g) all-purpose flour
  • 1/4 cup (60 ml) vegetable oil
  • 1 teaspoon (5 ml) vanilla extract
  • 1/2 teaspoon (2 g) baking powder
  • Pinch of salt

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, beat the eggs and sugar together for about 5-7 minutes until thick and pale.
  3. In another bowl, sift together the flour, baking powder, and salt.
  4. Gradually fold the dry ingredients into the egg mixture using a rubber spatula.
  5. Gently fold in the vegetable oil and vanilla extract until just combined.
  6. Transfer the batter to the prepared silicone cake pan, smoothing the top.
  7. Bake in the preheated oven for 25 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool in the pan for 10-15 minutes before transferring to a wire rack. Serve warm or at room temperature.
