Ingredients:
- 1.5 cups (180g) graham cracker crumbs
- 1/3 cup (75g) unsalted butter, melted
- 2 tbsp (25g) brown sugar
- 1/2 tsp (2g) ground cinnamon
- 24 oz (680g) full-fat cream cheese, softened to room temperature
- 1/2 cup (120ml) pure maple syrup
- 1/3 cup (65g) granulated sugar
- 1/2 cup (120g) sour cream, room temperature
- 1 tsp (5ml) vanilla extract
- 3 large eggs, room temperature
- 1 tbsp (8g) all-purpose flour
- 3 large (approx. 600g) Granny Smith apples, peeled and diced
- 2 tbsp (30g) unsalted butter
- 1/4 cup (60ml) pure maple syrup
- 2 tbsp (25g) brown sugar
- 1 tsp (2g) ground cinnamon
- 1 tsp (5g) cornstarch mixed with 1 tbsp water
- 1/2 cup (100g) granulated sugar
- 6 tbsp (85g) unsalted butter, cubed
- 1/2 cup (120ml) heavy cream
- 1/2 tsp (3g) flaky sea salt
Instructions:
- Preheat your oven to 325°F (160°C).
- Combine graham cracker crumbs, melted butter, brown sugar, and cinnamon in a bowl until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of a 9-inch springform pan.
- Bake the crust for 10 minutes, then remove and let cool while you prepare the filling.
- Beat the softened cream cheese and granulated sugar on medium speed until completely smooth and aerated.
- Mix in the maple syrup, sour cream, vanilla extract, and flour until combined.
- Add eggs one at a time, beating on low speed just until incorporated to avoid adding too much air.
- Pour the filling into the prepared crust. Wrap the outside of the springform pan with heavy-duty aluminum foil and place it in a roasting pan filled with hot water (bain-marie).
- Bake for 65-75 minutes until the edges are set but the center still has a slight jiggle. Remove from the water bath and cool completely before refrigerating for at least 6 hours.
- Sauté diced apples with butter, maple syrup, brown sugar, and cinnamon over medium heat until tender. Stir in the cornstarch slurry and simmer until the glaze thickens.
- Prepare the caramel by heating granulated sugar in a saucepan until melted and golden. Stir in cubed butter and heavy cream carefully, then finish with flaky sea salt.
- Top the chilled cheesecake with the warm caramelized apples and drizzle with salted caramel.
