Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking powder
- 1 tsp (5g) baking soda
- 1 tbsp (8g) ground cinnamon
- ½ tsp (3g) salt
- ¾ cup (170g) vegetable oil
- ¾ cup (150g) granulated sugar
- ½ cup (120ml) pure maple syrup
- 2 large (100g) eggs
- 1 tsp (5ml) vanilla extract
- 2 cups (220g) grated zucchini, squeezed dry
- ½ cup (60g) chopped walnuts
- 8 oz (225g) cream cheese, softened
- ½ cup (115g) unsalted butter, softened
- 3 cups (360g) powdered sugar
- 2 tbsp (30ml) pure maple syrup
- 1 tsp (5ml) vanilla extract
Instructions:
- Grate the zucchini using the fine holes of a box grater. Place the shreds in a clean kitchen towel or paper towels and squeeze firmly over the sink to remove excess water.
- Whisk together the flour, baking powder, baking soda, cinnamon, and salt in a large bowl.
- In a separate bowl, whisk the oil, sugar, maple syrup, eggs, and vanilla until smooth.
- Fold the squeezed zucchini and nuts into the wet ingredients, then gently stir in the dry ingredients until just combined.
- Pour the batter into a greased and parchment-lined 9x13 inch pan. Bake at 350°F (175°C) for 40 minutes until a toothpick inserted into the center comes out clean.
- Let the cake cool completely in the pan.
- Beat the softened cream cheese and butter together until velvety. Gradually add the powdered sugar on low speed, then stir in the maple syrup and vanilla.
- Whip the frosting on high for 2 minutes until airy, then spread evenly over the cooled cake.
