Ingredients:
- 2 cups (250g) all-purpose flour
- 3/4 cup (150g) coconut sugar
- 1 tsp (5g) baking soda
- 1 tsp (5g) baking powder
- 2 tsp (10g) ground cinnamon
- 1/2 tsp (2g) ground nutmeg
- 1/2 tsp (2g) ground cloves
- 1/2 tsp (3g) sea salt
- 1/2 cup (120ml) unsweetened applesauce
- 1/2 cup (115g) unsalted butter
- 2 large eggs
- 1 cup (240ml) buttermilk
- 1 tsp (5ml) pure vanilla extract
- 1/2 cup (115g) unsalted butter
- 1/4 cup (60ml) pure grade A maple syrup
- 2 cups (240g) sifted confectioners' sugar
- 1 tbsp (15ml) heavy cream
- 1g sea salt
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- In a medium bowl, whisk together the flour, coconut sugar, baking soda, baking powder, cinnamon, nutmeg, cloves, and sea salt until no clumps remain.
- In a large bowl, beat the softened butter and unsweetened applesauce until smooth. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- Alternating between the dry ingredients and the buttermilk, fold the mixture together using a spatula. Stop mixing the moment the last streak of flour disappears to ensure a tender crumb.
- Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean with a few moist crumbs.
- To prepare the frosting, whisk the maple syrup into softened butter at room temperature until emulsified.
- Gradually whisk in the sifted confectioners' sugar, heavy cream, and a pinch of salt until the frosting is stable and velvety.
- Allow the cake to cool completely before applying the maple frosting.
