Ingredients:
- 1 large ripe mango (about 1 ¼ cups diced or 300g)
- 1 medium red bell pepper, finely diced (about 1 cup or 150g)
- ¼ cup red onion, finely chopped (about 40g)
- 1 medium jalapeño pepper, seeded and minced (optional, adjust to taste)
- 1 lime, juiced
- ¼ cup fresh cilantro, chopped (optional, adjust to taste)
- Salt and pepper, to taste
Instructions:
- Peel and dice the mango into small cubes.
- Finely dice the red bell pepper.
- Chop the red onion and jalapeño.
- Juice the lime.
- In a mixing bowl, combine diced mango, red bell pepper, red onion, and jalapeño.
- Pour in the lime juice and season with salt and pepper. Add chopped cilantro if using.
- Gently toss all the ingredients together until well mixed.
- Taste and adjust seasoning if necessary.
