Ingredients:

  • 1 large ripe mango (about 1 ¼ cups diced or 300g)
  • 1 medium red bell pepper, finely diced (about 1 cup or 150g)
  • ¼ cup red onion, finely chopped (about 40g)
  • 1 medium jalapeño pepper, seeded and minced (optional, adjust to taste)
  • 1 lime, juiced
  • ¼ cup fresh cilantro, chopped (optional, adjust to taste)
  • Salt and pepper, to taste

Instructions:

  1. Peel and dice the mango into small cubes.
  2. Finely dice the red bell pepper.
  3. Chop the red onion and jalapeño.
  4. Juice the lime.
  5. In a mixing bowl, combine diced mango, red bell pepper, red onion, and jalapeño.
  6. Pour in the lime juice and season with salt and pepper. Add chopped cilantro if using.
  7. Gently toss all the ingredients together until well mixed.
  8. Taste and adjust seasoning if necessary.
  9. Enjoy your mango salsa immediately with your choice of chips, tacos, or grilled meats.
