Ingredients:
- 4 cups mixed salad greens (e.g., romaine, arugula, spinach)
- 1 cup cherry tomatoes, halved
- 1 large cucumber, diced
- 1 bell pepper, diced
- 1 small red onion, thinly sliced
- 1/2 cup shredded carrots
- 1/4 cup feta cheese, crumbled (optional)
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey or maple syrup
- Salt and pepper to taste
Instructions:
- Rinse and dry the salad greens. Tear any large leaves into bite-sized pieces.
- Halve the cherry tomatoes and place them in a large bowl. Dice the cucumber, bell pepper, and onion; add to the bowl. Shred the carrots and add them as well.
- In a separate bowl, combine olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper. Whisk until the dressing is emulsified.
- Add the salad greens to the vegetable mixture. Drizzle the dressing over the salad and toss gently to combine.
- If desired, sprinkle feta cheese over the top before serving.
