Ingredients:

  • 4 cups mixed salad greens (e.g., romaine, arugula, spinach)
  • 1 cup cherry tomatoes, halved
  • 1 large cucumber, diced
  • 1 bell pepper, diced
  • 1 small red onion, thinly sliced
  • 1/2 cup shredded carrots
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste

Instructions:

  1. Rinse and dry the salad greens. Tear any large leaves into bite-sized pieces.
  2. Halve the cherry tomatoes and place them in a large bowl. Dice the cucumber, bell pepper, and onion; add to the bowl. Shred the carrots and add them as well.
  3. In a separate bowl, combine olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper. Whisk until the dressing is emulsified.
  4. Add the salad greens to the vegetable mixture. Drizzle the dressing over the salad and toss gently to combine.
  5. If desired, sprinkle feta cheese over the top before serving.
