Ingredients:
- 2 cups (250g) all-purpose flour
- ¾ cup (75g) unsweetened cocoa powder
- 1 ½ cups (300g) brown sugar, packed
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 2 large eggs (100g)
- ½ cup (120ml) vegetable oil
- 1 cup (240ml) Greek yogurt
- 1 tsp (5ml) vanilla extract
- 2 cups (220g) finely shredded zucchini, squeezed dry
- 1 cup (170g) semi-sweet chocolate chips
- ½ cup (85g) semi-sweet chocolate chips
- 3 tbsp (45ml) heavy cream
- 1 tbsp (15g) unsalted butter
Instructions:
- Grate the zucchini using the fine holes of a box grater.
- Place zucchini shreds in a clean kitchen towel or paper towels and gently squeeze to remove excess moisture.
- Preheat oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper.
- In a large bowl, whisk together flour, cocoa powder, brown sugar, baking soda, and salt until no cocoa clumps remain.
- Add eggs, oil, Greek yogurt, and vanilla to the dry ingredients; stir with a spatula until the batter is smooth.
- Gently fold in the shredded zucchini and 1 cup of chocolate chips until just combined.
- Spread the batter evenly into the prepared pan.
- Bake on the center rack for 35–40 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Allow the cake to cool completely in the pan before lifting it out using the parchment paper.
- Optional: Melt the remaining chocolate chips, heavy cream, and butter together to create a glaze and spread over the cooled cake.
