Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (5g) baking powder
- 1 tsp (5g) salt
- 2 tsp (5g) ground cinnamon
- ½ cup (110g) vegetable oil
- ¾ cup (150g) granulated sugar
- ½ cup (100g) packed brown sugar
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 2 cups (approx. 300g) grated zucchini, unpeeled
Instructions:
- Preheat your oven to 350°F (175°C). Grease your 9x5 inch loaf pan thoroughly or line it with parchment paper.
- Grate your zucchini using the medium holes of your grater; do not peel the skin.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon until combined.
- Create a well in the center of the dry ingredients and pour in the oil, granulated sugar, brown sugar, eggs, and vanilla.
- Stir the mixture until a smooth, creamy emulsion forms.
- Gently fold in the grated zucchini using a spatula until just distributed.
- Pour the batter into the prepared pan, smoothing the top with your spatula.
- Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
