Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • ½ tsp (3g) salt
  • 1 tsp (2g) ground cinnamon
  • ¾ cup (170ml) vegetable oil
  • 1 cup (200g) packed brown sugar
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) shredded zucchini (unpeeled)
  • ½ cup (60g) chopped walnuts

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease your 9x5-inch loaf pan thoroughly with butter or oil, or line it with parchment paper.
  2. In a large bowl, whisk together the vegetable oil, brown sugar, eggs, and vanilla. Stir until the mixture is smooth and the sugar has begun to dissolve into the oil.
  3. Sift the flour, baking soda, salt, and cinnamon directly into the wet mixture. Using a spatula, gently fold the ingredients together until no more streaks of white flour are visible.
  4. Gently fold in the shredded zucchini and chopped walnuts. Stir just until the zucchini is evenly distributed throughout the batter.
  5. Pour the batter into the prepared pan and smooth the top. Bake for 45–55 minutes until the top is a deep golden brown and a toothpick inserted into the center comes out clean. Let it cool in the pan for 10 minutes before transferring to a wire rack.
