Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- ¾ cup (170ml) vegetable oil
- 1 cup (200g) packed brown sugar
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) shredded zucchini (unpeeled)
- ½ cup (60g) chopped walnuts
Instructions:
- Preheat your oven to 350°F (175°C). Grease your 9x5-inch loaf pan thoroughly with butter or oil, or line it with parchment paper.
- In a large bowl, whisk together the vegetable oil, brown sugar, eggs, and vanilla. Stir until the mixture is smooth and the sugar has begun to dissolve into the oil.
- Sift the flour, baking soda, salt, and cinnamon directly into the wet mixture. Using a spatula, gently fold the ingredients together until no more streaks of white flour are visible.
- Gently fold in the shredded zucchini and chopped walnuts. Stir just until the zucchini is evenly distributed throughout the batter.
- Pour the batter into the prepared pan and smooth the top. Bake for 45–55 minutes until the top is a deep golden brown and a toothpick inserted into the center comes out clean. Let it cool in the pan for 10 minutes before transferring to a wire rack.
