Ingredients:
- 1.5 cups (225g) grated zucchini, squeezed dry
- 1 cup (110g) grated carrots
- 0.5 cup (65g) finely diced Granny Smith apple
- 0.25 cup (35g) raisins
- 0.25 cup (30g) sweetened shredded coconut
- 0.25 cup (30g) chopped walnuts
- 0.5 cup (120ml) neutral oil
- 2 large eggs
- 0.5 cup (120g) plain Greek yogurt
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tsp (5g) baking soda
- 0.5 tsp (3g) salt
- 1.5 tsp (4g) ground cinnamon
- 0.25 tsp (1g) ground nutmeg
Instructions:
- Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- Grate the zucchini and carrots. Place the grated zucchini in a clean kitchen towel and squeeze firmly to remove excess water.
- Finely dice the Granny Smith apple into pieces no larger than a pea.
- In a medium bowl, whisk together the flour, sugar, baking soda, salt, cinnamon, and nutmeg until no clumps remain.
- In a large bowl, beat the eggs, oil, Greek yogurt, and vanilla until the mixture is smooth and pale.
- Gradually stir the dry ingredients into the wet mixture using a spatula until just combined.
- Gently fold in the squeezed zucchini, carrots, diced apple, raisins, coconut, and walnuts.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
