Instructions:

  1. In a microwave-safe bowl, slightly warm the peanut butter for about 30 seconds until softened and easily stirrable. Stir in the honey or maple syrup until fully combined.
  2. In a separate, large mixing bowl, combine the dry ingredients: rolled oats, ground flaxseed, mini chocolate chips, vanilla extract, and salt.
  3. Pour the wet peanut butter and sweetener mixture over the dry ingredients. Mix thoroughly using a sturdy spatula or your hands until the mixture is cohesive, sticky, and every oat flake is coated.
  4. Cover the bowl and chill the mixture in the refrigerator for 20 minutes. This step is non-negotiable as it allows the fats to solidify, preventing the balls from being too sticky to handle.
  5. Once chilled, use a small cookie scoop or tablespoon to roll the mixture into 20 to 25 uniform balls. Store the finished energy balls in an airtight container in the refrigerator for up to one week.
