Ingredients:
- 12 oz butterscotch chips
- 1/2 cup creamy peanut butter
- 6 cups chow mein noodles
Instructions:
- Combine the butterscotch chips and peanut butter in your glass bowl.
- Microwave for 30 seconds, then take it out and stir vigorously. Note: Stirring prevents the edges from burning
- Repeat the 30 second bursts, stirring each time, until the mixture is completely smooth and glossy.
- Remove from heat and let it sit for 60 seconds to cool slightly.
- Pour the chow mein noodles into the bowl.
- Use your spatula to fold the noodles in with a gentle lifting motion until every noodle is fully coated in gold.
- Line your baking sheet with parchment paper.
- Scoop rounded mounds of the mixture onto the sheet.
- Let the clusters set at room temperature for 15-20 minutes until firm to the touch.
