Ingredients:

  • 2 ripe mangoes, peeled and diced (approx. 480g)
  • 1 red bell pepper, diced (approx. 150g)
  • 1 small cucumber, diced (approx. 200g)
  • 1/4 red onion, finely chopped (approx. 40g)
  • 1/4 cup chopped fresh cilantro (approx. 15g)
  • 1/4 cup chopped fresh mint (approx. 15g)
  • 2 tablespoons sweet chili sauce (approx. 30ml)
  • 2 tablespoons fresh lime juice (approx. 30ml)
  • 1 teaspoon lime zest (optional, for extra zing)

Instructions:

  1. Peel and dice the mangoes, dice the red bell pepper and cucumber, and finely chop the red onion, cilantro, and mint.
  2. In a small bowl, combine sweet chili sauce, lime juice, and lime zest (if using). Whisk until well blended.
  3. In a large mixing bowl, add the diced mangoes, bell pepper, cucumber, red onion, cilantro, and mint. Pour the dressing over the salad.
  4. Gently toss all the ingredients until the salad is well coated in the dressing.
  5. Transfer the salad to a serving platter or bowls. Enjoy immediately or chill briefly before serving.
