Ingredients:
- 2 ripe mangoes, peeled and diced (approx. 480g)
- 1 red bell pepper, diced (approx. 150g)
- 1 small cucumber, diced (approx. 200g)
- 1/4 red onion, finely chopped (approx. 40g)
- 1/4 cup chopped fresh cilantro (approx. 15g)
- 1/4 cup chopped fresh mint (approx. 15g)
- 2 tablespoons sweet chili sauce (approx. 30ml)
- 2 tablespoons fresh lime juice (approx. 30ml)
- 1 teaspoon lime zest (optional, for extra zing)
Instructions:
- Peel and dice the mangoes, dice the red bell pepper and cucumber, and finely chop the red onion, cilantro, and mint.
- In a small bowl, combine sweet chili sauce, lime juice, and lime zest (if using). Whisk until well blended.
- In a large mixing bowl, add the diced mangoes, bell pepper, cucumber, red onion, cilantro, and mint. Pour the dressing over the salad.
- Gently toss all the ingredients until the salad is well coated in the dressing.
- Transfer the salad to a serving platter or bowls. Enjoy immediately or chill briefly before serving.
