Ingredients:
- 1.5 lb fresh green beans, trimmed and snapped
- 8 oz Cremini mushrooms, finely chopped
- 4 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 1.5 cups whole milk
- 0.5 cup chicken or vegetable broth
- 0.25 cup sour cream
- 3 cloves garlic, minced
- 0.5 small yellow onion, finely diced
- 1 tsp salt
- 0.5 tsp black pepper
- 0.25 tsp ground nutmeg
- 1 tsp soy sauce
- 1.5 cups crispy fried onions
- 0.25 cup grated Parmesan cheese
Instructions:
- Bring a large pot of salted water to a boil. Blanch the 1.5 lb of fresh green beans for 3-4 minutes until they are snap tender and bright green. Note: This softens the cellulose just enough so they finish perfectly in the oven.
- Drain the beans and immediately plunge them into a bowl of ice water. Cook until the beans feel cold to the touch, then drain again and pat them very dry.
- In your large 12 inch skillet over medium heat, melt the 4 tbsp of butter. Add the chopped mushrooms and diced yellow onion, sautéing for 5-7 minutes. Cook until the skillet is dry and the mushrooms look browned.
- Stir in the 3 cloves of minced garlic and cook for exactly 1 minute. Sauté until the aroma fills the room, being careful not to let the garlic turn brown or bitter.
- Sprinkle the 1/4 cup of flour over the vegetables and whisk constantly for 1-2 minutes. Note: This cooks out the raw flour taste and creates a golden paste.
- Slowly pour in the 1.5 cups of whole milk and 0.5 cup of broth while whisking vigorously. Simmer 3-5 minutes until the sauce coats the back of a spoon.
- Remove the skillet from the heat. Stir in the 0.25 cup of sour cream, 1 tsp salt, 0.5 tsp pepper, 0.25 tsp nutmeg, and 1 tsp soy sauce. Whisk until the sauce looks silken.
- Add the blanched beans into the skillet and toss them gently. Ensure every bean is fully submerged in the cream.
- Transfer the entire mixture into your 9x13 inch baking dish. Spread it out evenly so the heat distributes well.
- Top the mixture with 1.5 cups of crispy fried onions and 0.25 cup of Parmesan cheese. Bake at 350°F (175°C) for 15-20 minutes until the sauce is bubbling and the onions are deeply golden.
