Ingredients:

  • 1.5 lb fresh green beans, trimmed and snapped
  • 8 oz Cremini mushrooms, finely chopped
  • 4 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 1.5 cups whole milk
  • 0.5 cup chicken or vegetable broth
  • 0.25 cup sour cream
  • 3 cloves garlic, minced
  • 0.5 small yellow onion, finely diced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp ground nutmeg
  • 1 tsp soy sauce
  • 1.5 cups crispy fried onions
  • 0.25 cup grated Parmesan cheese

Instructions:

  1. Bring a large pot of salted water to a boil. Blanch the 1.5 lb of fresh green beans for 3-4 minutes until they are snap tender and bright green. Note: This softens the cellulose just enough so they finish perfectly in the oven.
  2. Drain the beans and immediately plunge them into a bowl of ice water. Cook until the beans feel cold to the touch, then drain again and pat them very dry.
  3. In your large 12 inch skillet over medium heat, melt the 4 tbsp of butter. Add the chopped mushrooms and diced yellow onion, sautéing for 5-7 minutes. Cook until the skillet is dry and the mushrooms look browned.
  4. Stir in the 3 cloves of minced garlic and cook for exactly 1 minute. Sauté until the aroma fills the room, being careful not to let the garlic turn brown or bitter.
  5. Sprinkle the 1/4 cup of flour over the vegetables and whisk constantly for 1-2 minutes. Note: This cooks out the raw flour taste and creates a golden paste.
  6. Slowly pour in the 1.5 cups of whole milk and 0.5 cup of broth while whisking vigorously. Simmer 3-5 minutes until the sauce coats the back of a spoon.
  7. Remove the skillet from the heat. Stir in the 0.25 cup of sour cream, 1 tsp salt, 0.5 tsp pepper, 0.25 tsp nutmeg, and 1 tsp soy sauce. Whisk until the sauce looks silken.
  8. Add the blanched beans into the skillet and toss them gently. Ensure every bean is fully submerged in the cream.
  9. Transfer the entire mixture into your 9x13 inch baking dish. Spread it out evenly so the heat distributes well.
  10. Top the mixture with 1.5 cups of crispy fried onions and 0.25 cup of Parmesan cheese. Bake at 350°F (175°C) for 15-20 minutes until the sauce is bubbling and the onions are deeply golden.
