Ingredients:

  • 2 cups (170g) chow mein noodles, lightly crushed
  • 1 cup (170g) salted peanuts
  • 1 cup (170g) butterscotch chips
  • 1 cup (170g) semi-sweet chocolate chips
  • ½ cup (120g) peanut butter, creamy
  • 1 tablespoon (15ml) unsalted butter

Instructions:

  1. In a large mixing bowl, gently combine the chow mein noodles, peanuts, and butterscotch chips.
  2. In a microwave-safe bowl, combine the chocolate chips, peanut butter, and butter. Microwave in 30-second intervals, stirring in between, until completely melted and smooth.
  3. Pour the melted chocolate mixture over the dry ingredients. Gently fold until everything is evenly coated.
  4. Drop spoonfuls of the mixture onto the prepared baking sheet.
  5. Refrigerate for at least 5 minutes, or until the cookies are firm.
