Ingredients:
- 2 cups (170g) chow mein noodles, lightly crushed
- 1 cup (170g) salted peanuts
- 1 cup (170g) butterscotch chips
- 1 cup (170g) semi-sweet chocolate chips
- ½ cup (120g) peanut butter, creamy
- 1 tablespoon (15ml) unsalted butter
Instructions:
- In a large mixing bowl, gently combine the chow mein noodles, peanuts, and butterscotch chips.
- In a microwave-safe bowl, combine the chocolate chips, peanut butter, and butter. Microwave in 30-second intervals, stirring in between, until completely melted and smooth.
- Pour the melted chocolate mixture over the dry ingredients. Gently fold until everything is evenly coated.
- Drop spoonfuls of the mixture onto the prepared baking sheet.
- Refrigerate for at least 5 minutes, or until the cookies are firm.
