Ingredients:

  • 225 g dark chocolate sandwich biscuits (e.g., Oreos, crushed fine)
  • 6 tbsp unsalted butter, melted
  • Pinch of fine sea salt
  • 225 g full-fat cream cheese, softened completely
  • 340 g smooth peanut butter (1⅓ cups)
  • 200 g icing sugar (powdered sugar), sifted
  • 1 tsp vanilla extract
  • 60 ml whole milk, cold
  • 480 ml heavy cream (2 cups), cold (for filling)
  • 120 ml heavy cream (½ cup), cold (for garnish)
  • 1 tbsp icing sugar (for garnish)
  • 1 tbsp peanut butter, melted slightly (for drizzling)
  • Chopped roasted peanuts or grated dark chocolate, for dusting

Instructions:

  1. Prepare and Chill the Crust: Pulse the chocolate biscuits in a food processor until they resemble fine sand. Mix the crumbs with the melted butter and salt until uniformly moistened. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Place the crust in the freezer for 15 to 20 minutes to set.
  2. Create the Stabilised Peanut Butter Base: Using an electric mixer, beat the softened cream cheese until completely smooth. Add the peanut butter, sifted icing sugar, and vanilla extract. Beat until fully combined and lump-free (about 2 minutes). Beat in the cold milk until the mixture is thick but pliable.
  3. Whip the Cream and Fold: In a separate, clean bowl, whip the 480 ml of cold heavy cream until firm, stiff peaks form. Gently fold about one-third of the whipped cream into the peanut butter base to lighten the mixture. Add the remaining whipped cream and fold gently using a rubber spatula until no streaks remain. Do not overmix.
  4. Assemble and Chill: Spoon the cloud-like filling into the chilled crust and smooth the top. Cover the pie loosely and refrigerate for a minimum of 4 hours, or preferably overnight, until the filling is fully set and firm to the touch.
  5. Garnish and Serve: Just before serving, whip the remaining 120 ml cold cream with 1 tbsp of icing sugar until soft peaks form. Decorate the pie with the whipped cream, drizzle with the slightly melted peanut butter, and sprinkle with chopped roasted peanuts or grated dark chocolate. Slice and serve immediately.
