Ingredients:

  • 1.5 cups all-purpose flour
  • 1 cup rolled oats
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 0.25 tsp salt
  • 0.5 cup unsalted butter, softened
  • 0.5 cup packed brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup grated zucchini, squeezed dry
  • 0.5 cup semi-sweet chocolate chips
  • 0.25 cup chopped walnuts

Instructions:

  1. Grate the zucchini using the large holes of a box grater. Place the shreds in a clean kitchen towel or paper towels and gently press out the excess liquid.
  2. Cream the softened butter and brown sugar in a large bowl until light and fluffy. Beat in the egg and vanilla extract.
  3. In a separate bowl, whisk together the flour, oats, baking soda, cinnamon, and salt.
  4. Gradually stir the dry ingredients into the wet mix, then fold in the squeezed zucchini, chocolate chips, and walnuts until just combined.
  5. Preheat oven to 350°F (175°C). Scoop rounded tablespoons of dough onto parchment-lined sheets, spacing them 2 inches apart.
  6. Bake for 10–12 minutes until edges are set and tops are deep golden brown, but centers remain slightly soft.
