Ingredients:
- 1.5 cups all-purpose flour
- 1 cup rolled oats
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 0.25 tsp salt
- 0.5 cup unsalted butter, softened
- 0.5 cup packed brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup grated zucchini, squeezed dry
- 0.5 cup semi-sweet chocolate chips
- 0.25 cup chopped walnuts
Instructions:
- Grate the zucchini using the large holes of a box grater. Place the shreds in a clean kitchen towel or paper towels and gently press out the excess liquid.
- Cream the softened butter and brown sugar in a large bowl until light and fluffy. Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the flour, oats, baking soda, cinnamon, and salt.
- Gradually stir the dry ingredients into the wet mix, then fold in the squeezed zucchini, chocolate chips, and walnuts until just combined.
- Preheat oven to 350°F (175°C). Scoop rounded tablespoons of dough onto parchment-lined sheets, spacing them 2 inches apart.
- Bake for 10–12 minutes until edges are set and tops are deep golden brown, but centers remain slightly soft.
