Ingredients:

  • 1.5 cups white whole wheat flour
  • 0.5 cup unsweetened cocoa powder
  • 0.75 cup coconut sugar
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup melted coconut oil
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 0.25 cup unsweetened applesauce
  • 2 cups finely shredded zucchini
  • 0.5 cup dark chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x9 inch pan or line it with parchment paper.
  3. Grate the zucchini using the fine holes of the grater; press lightly with a paper towel if exceptionally watery, but do not squeeze bone-dry.
  4. In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda, and salt until no lumps remain.
  5. Create a well in the center and add the melted oil, eggs, vanilla, and applesauce. Whisk until just combined; stop when flour streaks disappear.
  6. Use a spatula to gently fold in the shredded zucchini and chocolate chips until evenly distributed.
  7. Pour the batter into the prepared pan and bake for 40 minutes or until a toothpick inserted in the center comes out clean.
