Ingredients:
- 1.5 cups white whole wheat flour
- 0.5 cup unsweetened cocoa powder
- 0.75 cup coconut sugar
- 1 tsp baking soda
- 0.5 tsp salt
- 0.5 cup melted coconut oil
- 2 large eggs
- 1 tsp pure vanilla extract
- 0.25 cup unsweetened applesauce
- 2 cups finely shredded zucchini
- 0.5 cup dark chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C).
- Grease a 9x9 inch pan or line it with parchment paper.
- Grate the zucchini using the fine holes of the grater; press lightly with a paper towel if exceptionally watery, but do not squeeze bone-dry.
- In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda, and salt until no lumps remain.
- Create a well in the center and add the melted oil, eggs, vanilla, and applesauce. Whisk until just combined; stop when flour streaks disappear.
- Use a spatula to gently fold in the shredded zucchini and chocolate chips until evenly distributed.
- Pour the batter into the prepared pan and bake for 40 minutes or until a toothpick inserted in the center comes out clean.
