Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tbsp (8g) baking powder
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1.5g) salt
- 2 tbsp (25g) coconut sugar
- 2 large eggs
- 3/4 cup (180ml) Greek yogurt
- 1/2 cup (120ml) unsweetened almond milk
- 1/3 cup (75g) unsalted butter, melted and cooled
- 1 tbsp (6g) fresh orange zest
- 1 tsp (5ml) vanilla extract
- 2 tbsp (30ml) fresh orange juice
Instructions:
- Whisk the all-purpose flour, baking powder, ground cinnamon, salt, and sugar in a medium mixing bowl.
- In a second bowl, beat the eggs and whisk in the Greek yogurt, almond milk, melted butter, orange zest, vanilla, and orange juice.
- Pour the wet mixture into the dry ingredients and stir gently until just combined, ensuring no large streaks of flour remain.
- Preheat the Belgian waffle maker and lightly grease with cooking spray.
- Pour approximately 1/2 cup of batter into the center of the iron and close the lid.
- Cook until steam stops escaping from the sides and the waffle is deep golden brown.
- Remove carefully and place immediately on a wire cooling rack to maintain crispiness.
