Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 tbsp (8g) baking powder
  • 1 tsp (2g) ground cinnamon
  • 1/4 tsp (1.5g) salt
  • 2 tbsp (25g) coconut sugar
  • 2 large eggs
  • 3/4 cup (180ml) Greek yogurt
  • 1/2 cup (120ml) unsweetened almond milk
  • 1/3 cup (75g) unsalted butter, melted and cooled
  • 1 tbsp (6g) fresh orange zest
  • 1 tsp (5ml) vanilla extract
  • 2 tbsp (30ml) fresh orange juice

Instructions:

  1. Whisk the all-purpose flour, baking powder, ground cinnamon, salt, and sugar in a medium mixing bowl.
  2. In a second bowl, beat the eggs and whisk in the Greek yogurt, almond milk, melted butter, orange zest, vanilla, and orange juice.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined, ensuring no large streaks of flour remain.
  4. Preheat the Belgian waffle maker and lightly grease with cooking spray.
  5. Pour approximately 1/2 cup of batter into the center of the iron and close the lid.
  6. Cook until steam stops escaping from the sides and the waffle is deep golden brown.
  7. Remove carefully and place immediately on a wire cooling rack to maintain crispiness.
