Ingredients:
- ½ cup (1 stick / 113g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- ½ cup (100g) packed light brown sugar
- 2 large eggs
- 1 teaspoon (5ml) vanilla extract
- ½ cup (60g) all-purpose flour
- ⅓ cup (30g) unsweetened cocoa powder
- ¼ teaspoon (1.5g) baking powder
- ¼ teaspoon (1.5g) salt
- ½ cup (1 stick / 113g) unsalted butter, softened
- ½ cup (100g) granulated sugar
- ¼ cup (50g) packed light brown sugar
- 1 large egg
- 1 teaspoon (5ml) vanilla extract
- 1 ½ cups (180g) all-purpose flour
- ½ teaspoon (3g) baking soda
- ¼ teaspoon (1.5g) salt
- ½ cup (85g) semi-sweet chocolate chips
- 12 Oreo cookies, roughly chopped
Instructions:
- Preheat oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving an overhang.
- In a bowl, combine melted butter, granulated sugar, and brown sugar. Whisk until smooth. Beat in eggs, then vanilla. In separate bowl, whisk flour, cocoa powder, baking powder, and salt. Gradually add dry to wet, mixing until just combined.
- In a separate bowl, cream softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in egg and vanilla. In another bowl, whisk flour, baking soda, and salt. Gradually add dry to wet, mixing until just combined. Fold in chocolate chips.
- Spread brownie batter evenly into the prepared pan. Drop spoonfuls of cookie dough evenly over the brownie batter. Sprinkle chopped Oreo cookies over the entire surface.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
- Let cool completely in the pan before lifting out using the parchment paper overhang. Cut into 12 squares and serve these Oreo Chunk Brookies.
