Ingredients:

  • 2 cups all-purpose flour (250g)
  • 1 teaspoon salt (5g)
  • 1 teaspoon baking powder (5g)
  • 3/4 cup warm water (180ml)
  • 2 tablespoons olive oil (30ml)
  • 8 ounces halloumi cheese, sliced (225g)
  • 1 tablespoon olive oil (15ml) – for frying
  • Honey, for drizzling (to taste)

Instructions:

  1. In a large bowl, combine flour, salt, and baking powder.
  2. Add warm water and olive oil; mix until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth.
  4. Cover and let it rest for 10 minutes.
  5. Slice the halloumi cheese evenly, about 1/4 inch thick.
  6. Divide the dough into four equal portions.
  7. Roll each portion into a circle approximately 6 inches in diameter.
  8. Heat a non-stick skillet over medium-high heat.
  9. Add a little olive oil and place one flatbread in the pan.
  10. Cook for about 2-3 minutes on each side until golden and slightly charred.
  11. Repeat with remaining flatbreads.
  12. In the same skillet, add more olive oil if necessary.
  13. Pan-fry the halloumi slices for 2-3 minutes on each side until golden brown.
  14. Place the cooked flatbreads on a plate.
  15. Top with crispy halloumi and drizzle generously with honey.
