Ingredients:
- 2 cups all-purpose flour (250g)
- 1 teaspoon salt (5g)
- 1 teaspoon baking powder (5g)
- 3/4 cup warm water (180ml)
- 2 tablespoons olive oil (30ml)
- 8 ounces halloumi cheese, sliced (225g)
- 1 tablespoon olive oil (15ml) – for frying
- Honey, for drizzling (to taste)
Instructions:
- In a large bowl, combine flour, salt, and baking powder.
- Add warm water and olive oil; mix until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth.
- Cover and let it rest for 10 minutes.
- Slice the halloumi cheese evenly, about 1/4 inch thick.
- Divide the dough into four equal portions.
- Roll each portion into a circle approximately 6 inches in diameter.
- Heat a non-stick skillet over medium-high heat.
- Add a little olive oil and place one flatbread in the pan.
- Cook for about 2-3 minutes on each side until golden and slightly charred.
- Repeat with remaining flatbreads.
- In the same skillet, add more olive oil if necessary.
- Pan-fry the halloumi slices for 2-3 minutes on each side until golden brown.
- Place the cooked flatbreads on a plate.
- Top with crispy halloumi and drizzle generously with honey.
