Ingredients:

  • ½ cup (120ml) Pineapple Juice
  • ¼ cup (60ml) White Vinegar
  • ¼ cup (50g) Granulated Sugar
  • 2 tablespoons (30ml) Ketchup
  • 2 tablespoons (30ml) Water
  • 1 tablespoon (15ml) Soy Sauce (light or regular)
  • 1 tablespoon (12g) Cornstarch (aka cornflour)
  • 1 teaspoon Red Food Coloring (optional, for that authentic color)
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Onion Powder
  • Pinch of Ground Ginger

Instructions:

  1. In the saucepan, whisk together pineapple juice, white vinegar, sugar, ketchup, water, soy sauce, cornstarch, garlic powder, onion powder, and ginger. Add red food coloring if desired.
  2. Bring the mixture to a simmer over medium heat, whisking constantly to prevent lumps.
  3. Reduce heat to low and continue simmering for 3-5 minutes, or until the sauce has thickened to your desired consistency. It should coat the back of a spoon.
  4. Taste the sauce and adjust sweetness or sourness to your preference. Add a little more sugar for sweetness or a splash of vinegar for tanginess.
  5. Remove from heat and let cool slightly before serving. The sauce will thicken further as it cools.
