Ingredients:
- ½ cup (120ml) Pineapple Juice
- ¼ cup (60ml) White Vinegar
- ¼ cup (50g) Granulated Sugar
- 2 tablespoons (30ml) Ketchup
- 2 tablespoons (30ml) Water
- 1 tablespoon (15ml) Soy Sauce (light or regular)
- 1 tablespoon (12g) Cornstarch (aka cornflour)
- 1 teaspoon Red Food Coloring (optional, for that authentic color)
- ½ teaspoon Garlic Powder
- ½ teaspoon Onion Powder
- Pinch of Ground Ginger
Instructions:
- In the saucepan, whisk together pineapple juice, white vinegar, sugar, ketchup, water, soy sauce, cornstarch, garlic powder, onion powder, and ginger. Add red food coloring if desired.
- Bring the mixture to a simmer over medium heat, whisking constantly to prevent lumps.
- Reduce heat to low and continue simmering for 3-5 minutes, or until the sauce has thickened to your desired consistency. It should coat the back of a spoon.
- Taste the sauce and adjust sweetness or sourness to your preference. Add a little more sugar for sweetness or a splash of vinegar for tanginess.
- Remove from heat and let cool slightly before serving. The sauce will thicken further as it cools.
