Ingredients:
- 2 cups (300g) fresh peaches, peeled and diced small
- 2 tbsp (25g) brown sugar
- 1 tsp (5g) cornstarch
- 1/2 tsp (1g) ground cinnamon
- 2 cups (250g) all-purpose flour
- 3/4 cup (150g) granulated sugar
- 2 tsp (10g) baking powder
- 1/2 tsp (3g) baking soda
- 1/2 tsp (3g) salt
- 1/2 cup (65g) all-purpose flour
- 1/3 cup (65g) brown sugar, packed
- 1/4 cup (55g) unsalted butter, cold and cubed
- 1/2 tsp (1g) ground cinnamon
Instructions:
- In a medium bowl, toss diced peaches with 2 tbsp brown sugar, cornstarch, and 1/2 tsp cinnamon. Let them sit for 10 minutes to release their natural syrups.
- In a small bowl, combine 1/2 cup flour, 1/3 cup brown sugar, and 1/2 tsp cinnamon. Use a fork or your fingers to work the cold cubed butter into the mixture until it resembles coarse crumbs with pea-sized lumps. Set aside in the fridge.
- In a large bowl, whisk together 2 cups flour, granulated sugar, baking powder, baking soda, and salt until fully combined.
