Ingredients:

  • 2 cups (300g) fresh peaches, peeled and diced
  • 1/4 cup (50g) brown sugar
  • 1 tbsp (15ml) lemon juice
  • 1/4 tsp (1.5g) salt
  • 2 cups (480ml) heavy cream, chilled
  • 1 cup (240ml) whole milk, chilled
  • 1/2 cup (100g) granulated sugar
  • 1 tsp (5ml) vanilla extract
  • 1/4 tsp (1.5g) almond extract

Instructions:

  1. Combine diced peaches, brown sugar, lemon juice, and salt in a saucepan over medium heat.
  2. Simmer for 10–15 minutes, stirring occasionally, until the peaches are soft and the liquid has reduced by half into a syrupy consistency.
  3. Remove from heat and blend the peach mixture until smooth.
  4. In a large bowl, whisk together the chilled heavy cream, whole milk, and granulated sugar until the sugar is completely dissolved.
  5. Stir in the vanilla and almond extracts.
  6. Slowly whisk in the cooled peach reduction until the base is a uniform, pale orange hue.
  7. Pour the mixture into your ice cream maker and churn according to the manufacturer's instructions (usually 20–25 minutes) until it reaches a soft-serve consistency.
  8. Transfer the churned ice cream to a chilled container and freeze for at least 4 hours to harden.
