Ingredients:
- 2 cups (300g) fresh peaches, peeled and diced
- 1/4 cup (50g) brown sugar
- 1 tbsp (15ml) lemon juice
- 1/4 tsp (1.5g) salt
- 2 cups (480ml) heavy cream, chilled
- 1 cup (240ml) whole milk, chilled
- 1/2 cup (100g) granulated sugar
- 1 tsp (5ml) vanilla extract
- 1/4 tsp (1.5g) almond extract
Instructions:
- Combine diced peaches, brown sugar, lemon juice, and salt in a saucepan over medium heat.
- Simmer for 10–15 minutes, stirring occasionally, until the peaches are soft and the liquid has reduced by half into a syrupy consistency.
- Remove from heat and blend the peach mixture until smooth.
- In a large bowl, whisk together the chilled heavy cream, whole milk, and granulated sugar until the sugar is completely dissolved.
- Stir in the vanilla and almond extracts.
- Slowly whisk in the cooled peach reduction until the base is a uniform, pale orange hue.
- Pour the mixture into your ice cream maker and churn according to the manufacturer's instructions (usually 20–25 minutes) until it reaches a soft-serve consistency.
- Transfer the churned ice cream to a chilled container and freeze for at least 4 hours to harden.
