Ingredients:
- 2 cups all-purpose flour
- 1/4 cup coconut sugar
- 4 tsp baking powder
- 1 tsp fine sea salt
- 1.33 cups whole milk
- 0.5 cup creamy peanut butter
- 1 large egg
- 1 tsp vanilla extract
Instructions:
- Preheat your oven to 350°F (180°C). Grease your loaf pan thoroughly with butter or non stick spray. Note: Using parchment paper with a slight overhang makes the loaf easy to lift out later.
- In a large bowl, combine the 2 cups flour, coconut sugar, baking powder, and sea salt. Whisk until the mixture is uniform and airy.
- In a separate medium bowl, whisk together the 1.33 cups milk, 0.5 cup peanut butter, egg, and vanilla. Whisk until the peanut butter is completely integrated and no streaks remain.
- Pour the wet mixture into the dry ingredients. Note: Use a spatula to gently fold them together just until the flour disappears.
- The batter should be thick but pourable. Stop mixing the moment you see no more dry flour.
- Pour the batter into your prepared loaf pan and smooth the top with your spatula.
- Place in the center of the oven and bake for 50 minutes. Bake until a toothpick inserted in the center comes out clean or with just a few moist crumbs.
