Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup coconut sugar
  • 4 tsp baking powder
  • 1 tsp fine sea salt
  • 1.33 cups whole milk
  • 0.5 cup creamy peanut butter
  • 1 large egg
  • 1 tsp vanilla extract

Instructions:

  1. Preheat your oven to 350°F (180°C). Grease your loaf pan thoroughly with butter or non stick spray. Note: Using parchment paper with a slight overhang makes the loaf easy to lift out later.
  2. In a large bowl, combine the 2 cups flour, coconut sugar, baking powder, and sea salt. Whisk until the mixture is uniform and airy.
  3. In a separate medium bowl, whisk together the 1.33 cups milk, 0.5 cup peanut butter, egg, and vanilla. Whisk until the peanut butter is completely integrated and no streaks remain.
  4. Pour the wet mixture into the dry ingredients. Note: Use a spatula to gently fold them together just until the flour disappears.
  5. The batter should be thick but pourable. Stop mixing the moment you see no more dry flour.
  6. Pour the batter into your prepared loaf pan and smooth the top with your spatula.
  7. Place in the center of the oven and bake for 50 minutes. Bake until a toothpick inserted in the center comes out clean or with just a few moist crumbs.
