Ingredients:

  • 1/2 cup (113g) unsalted butter
  • 1 cup (200g) granulated sugar
  • 1/2 cup (120ml) light corn syrup
  • 1 cup (250g) creamy peanut butter
  • 6 cups (170g) cornflakes cereal

Instructions:

  1. Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large saucepan, combine butter, sugar, and corn syrup. Cook over medium heat, stirring constantly, until the butter is melted and the sugar is dissolved. Bring to a simmer and cook for 1 minute.
  3. Remove the saucepan from the heat and stir in the peanut butter until smooth and completely melted.
  4. Gently fold in the cornflakes until they are evenly coated in the peanut butter mixture.
  5. Drop spoonfuls of the mixture onto the prepared baking sheet.
  6. Place the baking sheet in the refrigerator and chill for at least 30 minutes, or until the clusters are firm.
  7. Once set, remove the clusters from the baking sheet and serve.
