- 2 large eggs
- 0.5 cup neutral oil
- 0.25 cup cold brew coffee
- 0.5 cup creamy peanut butter
- 0.33 cup sweetened condensed milk
- 1 cup chopped peanut butter cups
- 0.25 cup mini chocolate chips
Instructions:
- Preheat your oven to 175°C (350°F).
- Line a 12-inch round pizza pan or stone with parchment paper.
- In a large mixing bowl, combine the brownie mix, eggs, neutral oil, and cold brew coffee. Whisk just until the dry streaks disappear; do not over-mix.
- Pour the batter onto the center of the prepared pan. Using an offset spatula, spread the batter toward the edges, leaving a 1/2-inch border to create a crust.
- Bake for 15 minutes until the edges are set.
- While the brownie is baking, whisk together the creamy peanut butter and sweetened condensed milk in a small bowl until a smooth, emulsified 'glue' forms.
- Remove the brownie from the oven. Drizzle the peanut butter mixture over the surface.
- Top immediately with chopped peanut butter cups and mini chocolate chips, allowing the residual heat to fuse the toppings to the brownie base.
- Return to the oven for 5 minutes until the chocolate chips are glossy and just starting to slump.
