Ingredients:

  • 18.3 oz fudge brownie mix
  • 2 large eggs
  • 0.5 cup neutral oil
  • 0.25 cup cold brew coffee
  • 0.5 cup creamy peanut butter
  • 0.33 cup sweetened condensed milk
  • 1 cup chopped peanut butter cups
  • 0.25 cup mini chocolate chips

Instructions:

  1. Preheat your oven to 175°C (350°F).
  2. Line a 12-inch round pizza pan or stone with parchment paper.
  3. In a large mixing bowl, combine the brownie mix, eggs, neutral oil, and cold brew coffee. Whisk just until the dry streaks disappear; do not over-mix.
  4. Pour the batter onto the center of the prepared pan. Using an offset spatula, spread the batter toward the edges, leaving a 1/2-inch border to create a crust.
  5. Bake for 15 minutes until the edges are set.
  6. While the brownie is baking, whisk together the creamy peanut butter and sweetened condensed milk in a small bowl until a smooth, emulsified 'glue' forms.
  7. Remove the brownie from the oven. Drizzle the peanut butter mixture over the surface.
  8. Top immediately with chopped peanut butter cups and mini chocolate chips, allowing the residual heat to fuse the toppings to the brownie base.
  9. Return to the oven for 5 minutes until the chocolate chips are glossy and just starting to slump.
