Ingredients:
- 1 cup (250g) natural creamy peanut butter
- 1/3 cup (80ml) honey or pure maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup (60g) vanilla or chocolate protein powder
- 1.5 cups (135g) old fashioned rolled oats
- 2 tablespoons (14g) ground flaxseed or chia seeds
- 1 pinch sea salt
- 1/3 cup (60g) mini dark chocolate chips
Instructions:
- In a large mixing bowl, whisk together the creamy peanut butter, honey (or maple syrup), and vanilla extract until the mixture is smooth and glossy.
- Stir in the protein powder, ground flaxseed (or chia seeds), and sea salt until no dry clumps remain and the mixture is well combined.
- Add the rolled oats, folding them into the peanut butter mixture until every oat is evenly coated and the dough becomes stiff.
- Gently fold in the mini dark chocolate chips until they are evenly distributed throughout the dough.
- Check consistency; if the dough is too dry, add 1 tablespoon of water or almond milk. If too sticky, refrigerate for 10 minutes.
- Using a small cookie scoop or tablespoon, portion the dough and roll between your palms to form approximately 15 smooth, round balls.
- Place the balls on a parchment-lined tray and refrigerate for at least 30 minutes to allow the oats to hydrate and the texture to firm up.
