Ingredients:

  • 1 cup (250g) natural creamy peanut butter
  • 1/3 cup (80ml) honey or pure maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup (60g) vanilla or chocolate protein powder
  • 1.5 cups (135g) old fashioned rolled oats
  • 2 tablespoons (14g) ground flaxseed or chia seeds
  • 1 pinch sea salt
  • 1/3 cup (60g) mini dark chocolate chips

Instructions:

  1. In a large mixing bowl, whisk together the creamy peanut butter, honey (or maple syrup), and vanilla extract until the mixture is smooth and glossy.
  2. Stir in the protein powder, ground flaxseed (or chia seeds), and sea salt until no dry clumps remain and the mixture is well combined.
  3. Add the rolled oats, folding them into the peanut butter mixture until every oat is evenly coated and the dough becomes stiff.
  4. Gently fold in the mini dark chocolate chips until they are evenly distributed throughout the dough.
  5. Check consistency; if the dough is too dry, add 1 tablespoon of water or almond milk. If too sticky, refrigerate for 10 minutes.
  6. Using a small cookie scoop or tablespoon, portion the dough and roll between your palms to form approximately 15 smooth, round balls.
  7. Place the balls on a parchment-lined tray and refrigerate for at least 30 minutes to allow the oats to hydrate and the texture to firm up.
