Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 1 cup (225g) creamy peanut butter
- 1 cup (200g) brown sugar, packed
- ½ cup (100g) granulated sugar
- 3 large eggs
- 1 tsp (5ml) vanilla extract
- ½ cup (120ml) vegetable oil
- 2 cups (220g) grated zucchini, squeezed dry
- ½ cup (115g) unsalted butter
- ¼ cup (30g) cocoa powder
- 2 cups (250g) powdered sugar
- 3 tbsp (45ml) milk
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Grease a 13x9 inch sheet pan or line it with parchment paper. Grate the zucchini and use a clean kitchen towel to squeeze out excess moisture.
- In a large bowl, beat the peanut butter, brown sugar, and granulated sugar until smooth.
- Add eggs one at a time, followed by the vanilla and oil, beating until the mixture is glossy.
- Fold in the flour, baking soda, and salt, then stir in the grated zucchini until just combined.
- Spread the batter evenly across the pan. Bake for 35–40 minutes until the edges pull away slightly and a toothpick inserted in the center comes out clean.
- While the cake cools, melt the butter in a microwave-safe bowl. Whisk in cocoa powder, powdered sugar, milk, and vanilla until smooth.
- Pour the chocolate glaze over the warm cake and spread quickly to the edges.
