Ingredients:

  • 2 cups (300g) firm pears, peeled and finely diced
  • 2 tbsp (28g) unsalted butter
  • 1/4 cup (50g) granulated sugar
  • 1 tsp (5ml) lemon juice
  • 2 cups (480ml) heavy whipping cream, chilled
  • 1 can (14 oz / 397g) sweetened condensed milk
  • 4 oz (113g) mild blue cheese, softened
  • 1 tsp (5ml) vanilla extract
  • 1/4 tsp (1.5g) fine sea salt

Instructions:

  1. Melt the butter in a skillet over medium heat.
  2. Add diced pears and granulated sugar, stirring frequently for 8–10 minutes until the pears are mahogany-colored and the liquid has reduced to a thick syrup.
  3. Stir in the lemon juice to brighten the flavor, remove from heat, and let cool completely.
  4. In a large mixing bowl, combine the softened blue cheese and sweetened condensed milk.
  5. Use a whisk or mixer to blend until the cheese is fully incorporated and no large lumps remain.
  6. Stir in the vanilla extract and sea salt until the mixture is uniform.
  7. In a separate chilled bowl, whip the heavy cream until stiff peaks form.
  8. Gently fold the whipped cream into the cheese mixture using a spatula to maintain the airy volume.
  9. Pour the mixture into your ice cream maker and churn according to the manufacturer's instructions.
  10. During the last 2 minutes of churning, pour in the cooled caramelized pears so they are evenly distributed without being crushed.
  11. Transfer the ice cream to an airtight freezer-safe container and freeze for at least 6 hours.
