Ingredients:
- 2 cups (300g) firm pears, peeled and finely diced
- 2 tbsp (28g) unsalted butter
- 1/4 cup (50g) granulated sugar
- 1 tsp (5ml) lemon juice
- 2 cups (480ml) heavy whipping cream, chilled
- 1 can (14 oz / 397g) sweetened condensed milk
- 4 oz (113g) mild blue cheese, softened
- 1 tsp (5ml) vanilla extract
- 1/4 tsp (1.5g) fine sea salt
Instructions:
- Melt the butter in a skillet over medium heat.
- Add diced pears and granulated sugar, stirring frequently for 8–10 minutes until the pears are mahogany-colored and the liquid has reduced to a thick syrup.
- Stir in the lemon juice to brighten the flavor, remove from heat, and let cool completely.
- In a large mixing bowl, combine the softened blue cheese and sweetened condensed milk.
- Use a whisk or mixer to blend until the cheese is fully incorporated and no large lumps remain.
- Stir in the vanilla extract and sea salt until the mixture is uniform.
- In a separate chilled bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cheese mixture using a spatula to maintain the airy volume.
- Pour the mixture into your ice cream maker and churn according to the manufacturer's instructions.
- During the last 2 minutes of churning, pour in the cooled caramelized pears so they are evenly distributed without being crushed.
- Transfer the ice cream to an airtight freezer-safe container and freeze for at least 6 hours.
