Ingredients:
- 2 lbs (900g) firm-ripe pears, peeled, cored, and cubed
- 1 ½ cups (150g) fresh cranberries
- ½ cup (100g) granulated sugar
- 1 tbsp (15ml) lemon juice
- 1 tsp (5g) ground cinnamon
- 1 tbsp (8g) cornstarch
- 1 cup (90g) old-fashioned rolled oats
- 1 cup (125g) all-purpose flour
- 1 cup (200g) packed light brown sugar
- ½ cup (113g) unsalted butter, chilled and cubed
- ½ tsp (3g) kosher salt
- ½ tsp (2g) ground cinnamon
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, toss the cubed pears and cranberries with the granulated sugar, lemon juice, cinnamon, and cornstarch until the fruit is coated. Pour the mixture into a 9x9-inch baking dish, spreading it evenly.
- In a separate bowl, whisk together the oats, flour, brown sugar, salt, and cinnamon.
- Add the chilled, cubed butter to the dry ingredients. Use a pastry cutter or fingertips to work the butter in until the mixture resembles coarse crumbs with some pea-sized lumps.
- Scatter the topping evenly over the fruit without pressing it down.
- Bake for 35 minutes, or until the fruit juices are bubbling and the topping is deep mahogany-gold.
- Remove from the oven and let it rest for 10 minutes to allow the filling to set.
