Ingredients:

  • 3 lbs firm pears, peeled, cored, and sliced
  • 2 tbsp fresh lemon juice
  • 1/2 tsp salt
  • 1/2 cup granulated white sugar
  • 1/2 cup packed light brown sugar
  • 1/4 cup cornstarch
  • 1 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/8 tsp ground cloves
  • 2 tbsp unsalted butter, cold and cubed

Instructions:

  1. Peel, core, and slice pears into uniform 1/4-inch slices.
  2. Toss the pear slices with lemon juice and salt in a large bowl to prevent oxidation and balance sweetness.
  3. In a separate small bowl, whisk together granulated white sugar, packed light brown sugar, cornstarch, cinnamon, ginger, and cloves until smooth.
  4. Pour the sugar-spice mixture over the lemon-coated pears and fold gently with a spatula until every slice is coated.
  5. Fold in the cold, cubed butter.
  6. Let the filling sit for 15 minutes to allow the cornstarch to hydrate and sugars to draw out moisture before adding to the crust.
