Ingredients:
- 3 lbs firm pears, peeled, cored, and sliced
- 2 tbsp fresh lemon juice
- 1/2 tsp salt
- 1/2 cup granulated white sugar
- 1/2 cup packed light brown sugar
- 1/4 cup cornstarch
- 1 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/8 tsp ground cloves
- 2 tbsp unsalted butter, cold and cubed
Instructions:
- Peel, core, and slice pears into uniform 1/4-inch slices.
- Toss the pear slices with lemon juice and salt in a large bowl to prevent oxidation and balance sweetness.
- In a separate small bowl, whisk together granulated white sugar, packed light brown sugar, cornstarch, cinnamon, ginger, and cloves until smooth.
- Pour the sugar-spice mixture over the lemon-coated pears and fold gently with a spatula until every slice is coated.
- Fold in the cold, cubed butter.
- Let the filling sit for 15 minutes to allow the cornstarch to hydrate and sugars to draw out moisture before adding to the crust.
