Ingredients:

  • 3 pounds Snow Crab Clusters, pre-cooked and frozen
  • 1/2 cup Unsalted Butter
  • 3 medium Garlic cloves, minced
  • 1 teaspoon Old Bay Seasoning
  • A pinch Red Pepper Flakes
  • 2 Lemon halves

Instructions:

  1. If the Snow crab clusters are frozen, thaw them completely first. Thawing overnight in the fridge is ideal, or submerge them in a sealed bag in cold running water for about 30 minutes. Pat the clusters dry.
  2. Prep the Steamer: Pour 1 inch of water into your largest stockpot. Add 1 tablespoon of salt and the 2 lemon halves. Bring this liquid to a rapid, rolling boil over high heat.
  3. Load the Crab: Place the steamer basket or colander into the pot, ensuring the crab clusters sit comfortably above the waterline. Arrange them so steam can circulate freely.
  4. Cover the pot tightly to trap the steam. Once sealed, steam thawed clusters for the precise cooking time of 4 to 6 minutes, or until piping hot (internal temperature 145°F / 63°C). Remove immediately using tongs.
  5. Prepare the Garlic Butter: While the crab is steaming, melt 1/2 cup of butter in a small saucepan over medium-low heat.
  6. Add 3 minced garlic cloves, Old Bay Seasoning, and a pinch of red pepper flakes (optional parsley) to the melted butter. Let the mixture simmer gently for 2 minutes to soften the garlic and allow the flavors to marry, ensuring the garlic does not brown.
  7. Serve: Arrange the hot clusters on a platter and serve immediately with the ultimate garlic butter dipping sauce.
