- 3 pounds Snow Crab Clusters, pre-cooked and frozen
- 1/2 cup Unsalted Butter
- 3 medium Garlic cloves, minced
- 1 teaspoon Old Bay Seasoning
- A pinch Red Pepper Flakes
- 2 Lemon halves
Instructions:
- If the Snow crab clusters are frozen, thaw them completely first. Thawing overnight in the fridge is ideal, or submerge them in a sealed bag in cold running water for about 30 minutes. Pat the clusters dry.
- Prep the Steamer: Pour 1 inch of water into your largest stockpot. Add 1 tablespoon of salt and the 2 lemon halves. Bring this liquid to a rapid, rolling boil over high heat.
- Load the Crab: Place the steamer basket or colander into the pot, ensuring the crab clusters sit comfortably above the waterline. Arrange them so steam can circulate freely.
- Cover the pot tightly to trap the steam. Once sealed, steam thawed clusters for the precise cooking time of 4 to 6 minutes, or until piping hot (internal temperature 145°F / 63°C). Remove immediately using tongs.
- Prepare the Garlic Butter: While the crab is steaming, melt 1/2 cup of butter in a small saucepan over medium-low heat.
- Add 3 minced garlic cloves, Old Bay Seasoning, and a pinch of red pepper flakes (optional parsley) to the melted butter. Let the mixture simmer gently for 2 minutes to soften the garlic and allow the flavors to marry, ensuring the garlic does not brown.
- Serve: Arrange the hot clusters on a platter and serve immediately with the ultimate garlic butter dipping sauce.
