Ingredients:
- 4 sirloin steaks (about 6 oz/170g each)
- 2 tablespoons (30 ml) olive oil
- 1 teaspoon (5 g) salt
- 1 teaspoon (5 g) black pepper
- 2 cloves garlic, minced
- ½ cup (115 g) unsalted butter, softened
- 2 tablespoons (30 g) fresh parsley, finely chopped
- 1 tablespoon (15 g) fresh thyme, finely chopped
- 1 teaspoon (5 g) lemon zest
- Pinch of salt
Instructions:
- Mix olive oil, salt, pepper, and minced garlic, coat the steaks, and let them marinate for 30 minutes to 4 hours.
- Combine softened butter, chopped parsley, thyme, lemon zest, and a pinch of salt in a bowl, mix well and set aside.
- Preheat the grill to high (about 450°F/232°C).
- Place steaks on the grill, searing for about 4-5 minutes per side. Use a meat thermometer for doneness.
- Remove the steaks from the grill and let them rest, tented with foil, for 5-10 minutes.
- Top each steak with a generous dollop of herb butter before serving.
