Ingredients:

  • 4 sirloin steaks (about 6 oz/170g each)
  • 2 tablespoons (30 ml) olive oil
  • 1 teaspoon (5 g) salt
  • 1 teaspoon (5 g) black pepper
  • 2 cloves garlic, minced
  • ½ cup (115 g) unsalted butter, softened
  • 2 tablespoons (30 g) fresh parsley, finely chopped
  • 1 tablespoon (15 g) fresh thyme, finely chopped
  • 1 teaspoon (5 g) lemon zest
  • Pinch of salt

Instructions:

  1. Mix olive oil, salt, pepper, and minced garlic, coat the steaks, and let them marinate for 30 minutes to 4 hours.
  2. Combine softened butter, chopped parsley, thyme, lemon zest, and a pinch of salt in a bowl, mix well and set aside.
  3. Preheat the grill to high (about 450°F/232°C).
  4. Place steaks on the grill, searing for about 4-5 minutes per side. Use a meat thermometer for doneness.
  5. Remove the steaks from the grill and let them rest, tented with foil, for 5-10 minutes.
  6. Top each steak with a generous dollop of herb butter before serving.
