Ingredients:

  • 2 slices Sourdough bread (or your favourite bread), about 1 inch thick
  • 2 tablespoons Pesto (homemade or store-bought), about 30 ml
  • 4 ounces Fresh mozzarella cheese, sliced (about 115 grams)
  • 2 tablespoons Unsalted butter, softened (about 30 grams)

Instructions:

  1. Spread softened butter evenly on one side of each slice of bread.
  2. Spread pesto evenly on the unbuttered side of one slice of bread. Layer mozzarella slices evenly over the pesto. Top with the second slice of bread, butter-side up.
  3. Place the sandwich in a cold non-stick skillet or on a preheated griddle over medium-low heat.
  4. Cook for 3-4 minutes per side, or until the bread is golden brown and the cheese is completely melted and gooey. Use a spatula to gently press down on the sandwich while cooking.
  5. Remove from the skillet/griddle and slice in half (optional). Serve hot and enjoy.
