Ingredients:
- 2 slices Sourdough bread (or your favourite bread), about 1 inch thick
- 2 tablespoons Pesto (homemade or store-bought), about 30 ml
- 4 ounces Fresh mozzarella cheese, sliced (about 115 grams)
- 2 tablespoons Unsalted butter, softened (about 30 grams)
Instructions:
- Spread softened butter evenly on one side of each slice of bread.
- Spread pesto evenly on the unbuttered side of one slice of bread. Layer mozzarella slices evenly over the pesto. Top with the second slice of bread, butter-side up.
- Place the sandwich in a cold non-stick skillet or on a preheated griddle over medium-low heat.
- Cook for 3-4 minutes per side, or until the bread is golden brown and the cheese is completely melted and gooey. Use a spatula to gently press down on the sandwich while cooking.
- Remove from the skillet/griddle and slice in half (optional). Serve hot and enjoy.
