- 1 can (20 oz) crushed pineapple, well-drained
- 1 cup mini marshmallows (optional)
- 1 cup sweetened shredded coconut
- 1 cup evaporated milk, chilled
- 1 cup whipped topping (like Cool Whip)
- 1/2 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1/4 cup chopped pecans or walnuts (optional)
Instructions:
- Open the can of crushed pineapple and drain it well to remove excess juice. You can use a fine mesh strainer to help with this process.
- In a large mixing bowl, combine the drained pineapple, mini marshmallows (if using), shredded coconut, and chopped nuts (if using). Gently fold these ingredients together until evenly mixed.
- In another bowl, pour in the chilled evaporated milk. Use an electric mixer to whip the evaporated milk until it thickens slightly, about 2-3 minutes.
- Add the granulated sugar and vanilla extract to the whipped evaporated milk. Continue mixing for another minute until the sugar is dissolved.
- Gently fold the whipped topping into the evaporated milk mixture until combined. Avoid overmixing to keep the fluffiness.
- Carefully fold the milk and whipped topping mixture into the pineapple mixture. Mix until everything is seamlessly combined.
- Transfer the mixture into a serving dish or individual cups. Cover with plastic wrap and refrigerate for at least 2 hours to let it set.
- Once chilled, serve the pineapple fluff by spooning it into bowls. Optionally, garnish with a sprinkle of extra coconut or chopped nuts.
