Ingredients:

  • 4 oz (120 ml) Aged Rum (such as Mount Gay Eclipse or Appleton Estate)
  • 6 oz (180 ml) Fresh Pineapple Juice (ideally freshly squeezed)
  • 2 oz (60 ml) Fresh Lime Juice
  • 1 oz (30 ml) Simple Syrup (equal parts sugar and water, heated until dissolved and cooled)
  • 2 Dashes Angostura Bitters
  • Pineapple wedges and maraschino cherries, for garnish
  • Ice

Instructions:

  1. If using fresh pineapple, cut a wedge and muddle it gently in the cocktail shaker. This releases more of its natural flavour.
  2. Add the rum, pineapple juice, lime juice, simple syrup, and Angostura bitters to the cocktail shaker.
  3. Add ice to the shaker and shake vigorously for 15-20 seconds until well-chilled. If you don't have a shaker, stir the ingredients with ice in a mixing glass for about 30 seconds.
  4. Strain the mixture into two glasses filled with ice.
  5. Garnish each cocktail with a pineapple wedge and a maraschino cherry. Serve immediately and enjoy!
