Ingredients:
- 4 oz (120 ml) Aged Rum (such as Mount Gay Eclipse or Appleton Estate)
- 6 oz (180 ml) Fresh Pineapple Juice (ideally freshly squeezed)
- 2 oz (60 ml) Fresh Lime Juice
- 1 oz (30 ml) Simple Syrup (equal parts sugar and water, heated until dissolved and cooled)
- 2 Dashes Angostura Bitters
- Pineapple wedges and maraschino cherries, for garnish
- Ice
Instructions:
- If using fresh pineapple, cut a wedge and muddle it gently in the cocktail shaker. This releases more of its natural flavour.
- Add the rum, pineapple juice, lime juice, simple syrup, and Angostura bitters to the cocktail shaker.
- Add ice to the shaker and shake vigorously for 15-20 seconds until well-chilled. If you don't have a shaker, stir the ingredients with ice in a mixing glass for about 30 seconds.
- Strain the mixture into two glasses filled with ice.
- Garnish each cocktail with a pineapple wedge and a maraschino cherry. Serve immediately and enjoy!
