Ingredients:

  • 2 cups prickly pear juice
  • 3/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 tsp fine sea salt

Instructions:

  1. Pour the prickly pear juice and 3/4 cup sugar into a saucepan. Set it over medium heat.
  2. Simmer for 10 minutes until the liquid bubbles slowly and thickens into a syrup. Note: The smell will become very concentrated and sweet here.
  3. Stir in the lemon juice. Remove the pan from the heat and let it cool completely.
  4. In a large bowl, whisk the chilled heavy cream, whole milk, 1/2 cup sugar, vanilla, and salt. Whisk until the sugar crystals disappear.
  5. Slowly stir the cooled prickly pear syrup into the cream mixture. Stir until the base is a uniform, vivid pink color.
  6. Pour the mixture into your ice cream maker. Churn for 20-25 minutes until it looks like soft serve ice cream.
  7. Transfer the mix to a chilled tub.
  8. Freeze for 4 hours until the edges are firm and the center is set.
