Ingredients:
- 2 cups prickly pear juice
- 3/4 cup granulated sugar
- 1 tbsp lemon juice
- 2 cups heavy cream
- 1 cup whole milk
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1/4 tsp fine sea salt
Instructions:
- Pour the prickly pear juice and 3/4 cup sugar into a saucepan. Set it over medium heat.
- Simmer for 10 minutes until the liquid bubbles slowly and thickens into a syrup. Note: The smell will become very concentrated and sweet here.
- Stir in the lemon juice. Remove the pan from the heat and let it cool completely.
- In a large bowl, whisk the chilled heavy cream, whole milk, 1/2 cup sugar, vanilla, and salt. Whisk until the sugar crystals disappear.
- Slowly stir the cooled prickly pear syrup into the cream mixture. Stir until the base is a uniform, vivid pink color.
- Pour the mixture into your ice cream maker. Churn for 20-25 minutes until it looks like soft serve ice cream.
- Transfer the mix to a chilled tub.
- Freeze for 4 hours until the edges are firm and the center is set.
