Ingredients:
- 2 (5-ounce) cans canned chicken breast, drained (280g total)
- ½ cup mayonnaise (120ml)
- ¼ cup finely chopped celery (25g)
- ¼ cup finely chopped red onion (25g)
- 2 tablespoons sweet pickle relish (30ml)
- 1 tablespoon Dijon mustard (15ml)
- ½ teaspoon black pepper (2.5ml)
- 2 tablespoons chopped fresh parsley (optional, 3g)
- 1 tablespoon lemon juice (optional, 15ml)
- Pinch of smoked paprika (optional)
Instructions:
- Open the cans of chicken breast and drain thoroughly. Flake the chicken with a fork.
- In a mixing bowl, combine mayonnaise, sweet pickle relish, Dijon mustard, black pepper, optional parsley, and lemon juice (if using). Whisk until smooth.
- Gently fold in the flaked chicken, chopped celery, and red onion.
- Mix well until everything is evenly coated in the dressing. For best flavour, cover and chill for at least 30 minutes. This allows the flavors to meld.
- Serve on your favourite bread, crackers, or lettuce wraps.
