Ingredients:

  • 2 (5-ounce) cans canned chicken breast, drained (280g total)
  • ½ cup mayonnaise (120ml)
  • ¼ cup finely chopped celery (25g)
  • ¼ cup finely chopped red onion (25g)
  • 2 tablespoons sweet pickle relish (30ml)
  • 1 tablespoon Dijon mustard (15ml)
  • ½ teaspoon black pepper (2.5ml)
  • 2 tablespoons chopped fresh parsley (optional, 3g)
  • 1 tablespoon lemon juice (optional, 15ml)
  • Pinch of smoked paprika (optional)

Instructions:

  1. Open the cans of chicken breast and drain thoroughly. Flake the chicken with a fork.
  2. In a mixing bowl, combine mayonnaise, sweet pickle relish, Dijon mustard, black pepper, optional parsley, and lemon juice (if using). Whisk until smooth.
  3. Gently fold in the flaked chicken, chopped celery, and red onion.
  4. Mix well until everything is evenly coated in the dressing. For best flavour, cover and chill for at least 30 minutes. This allows the flavors to meld.
  5. Serve on your favourite bread, crackers, or lettuce wraps.
