Ingredients:
- 1 cup (226g) full-fat cottage cheese, blended until smooth
- 1 ½ cups (180g) self-raising flour (or AP flour + 1.5 tsp baking powder + 0.25 tsp salt)
- 1 large egg, lightly beaten
- 1 large egg white, for brushing
- 2 Tablespoons Everything Bagel Seasoning
Instructions:
- Prepare the Cottage Cheese: Blend the cottage cheese in a food processor until completely smooth, resembling thick yogurt. Measure out 1 cup and transfer to a large mixing bowl.
- Combine Wet Ingredients: Add the lightly beaten egg to the blended cottage cheese and mix well until uniform.
- Form the Dough: Gradually add the self-raising flour to the wet mixture. Mix until a shaggy dough forms. Turn the mixture out onto a lightly floured surface.
- Knead Briefly: Knead the dough for only 1–2 minutes until it comes together into a smooth, non-sticky ball. Avoid overworking the dough.
- Shape the Bagels: Divide the dough into 6 equal portions. Roll each portion into a rope and form a circle, pinching the ends securely together to form the bagel shape.
- Prepare for Baking: Place the shaped bagels onto a parchment-lined baking sheet. Lightly brush the tops with the reserved egg white.
- Apply Topping: Immediately sprinkle generously with Everything Bagel Seasoning, ensuring it adheres well to the egg wash.
- Bake: Bake in a preheated oven at 375°F (190°C) for 20–25 minutes, or until the bagels are golden brown and slightly firm to the touch.
- Cool: Transfer the baked bagels to a wire rack to cool completely before slicing and serving.
