- 1 1/2 cups (190g) All-purpose flour
- 1/2 cup (60g) Coconut sugar
- 1 tsp (5g) Baking soda
- 1/2 tsp (3g) Salt
- 1 tbsp (6g) Pumpkin pie spice
- 1 cup (245g) Pure pumpkin puree
- 2 Large eggs
- 1/2 cup (120ml) Unsweetened applesauce
- 1 tsp (5ml) Pure vanilla extract
- 8 oz (225g) Full-fat block cream cheese
- 4 tbsp (56g) Unsalted butter
- 1 cup (120g) Powdered sugar
- 1 tsp (5ml) Pure vanilla extract
- 1/4 tsp (1g) Salt
Instructions:
- In a medium bowl, whisk together the all-purpose flour, coconut sugar, baking soda, salt, and pumpkin pie spice until no clumps remain.
- In a large bowl, beat the pumpkin puree, eggs, unsweetened applesauce, and vanilla extract until the mixture is smooth.
- Gradually fold the dry ingredients into the wet ingredients using a spatula, stirring only until just combined to avoid a gummy texture.
- Grease a 9x13 inch baking pan or line it with parchment paper, then pour in the batter and smooth the top.
- Bake at 350°F (175°C) for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely on a wire rack before frosting.
- Beat the softened block cream cheese and unsalted butter together on medium-high until pale and fluffy.
- Slowly mix in the powdered sugar, salt, and vanilla extract.
- Whip for an additional 2 minutes until the frosting reaches a velvety, spreadable consistency, then apply to the cooled cake.
